Reset Reflections – Weeks 2 and 3

I’m now a week post-Reset, starting to phase foods back into my diet, and feeling amazing! I’ll share my results shortly, but in the meantime, here’s how weeks 2 and 3 went.

Week 2 was the first fully-vegan week. I never would have imagined myself eating a vegan diet, but not only am I doing it, I enjoy it! I don’t have plans to stay on a vegan diet (unless I find that I have some food intolerance issues that necessitate it), but I will definitely be incorporating some vegetarian/vegan days into my meal planning rotations. I found some recipes that I love, tried some things I wouldn’t have normally tried, and learned that I can do anything I set my mind to!!!

Here’s a glimpse into what I ate during week 2:

In a nutshell, week 2 was lots of fruits and vegetables, whole grains and some lentils and legumes (but less than week 1). There was a lot of variety in what I ate, and flexibility for busy days, ex:

– On busy mornings, I made myself Vegan Shakeology with berries and chia seeds

– I made the Hearty vegetable miso soup and the Sweet potato and roasted red pepper soup in bulk and froze portions so I could grab them on nights when we spent longer in the pool with B than we originally planned 🙂

By the middle of week 2, I was feeling absolutely fantastic! My skin was clearer, I could tell my weight was down, I was sleeping fitfully and waking up ready to tackle the day, and life was good!

Week 3 was fruits and vegetables. All day. Everyday. Here’s one day of eating:

Breakfast: Fruit plate; Lunch: Asian cabbage salad and Miso soup; Snack: Chocolate chia seed pudding; Dinner: Hearty vegetable miso soup and garlic veggies

 

I have to admit that by Friday of week 3, I was ready for something not plant-based. I was never hungry, just craving a change. My sweet husband was making all sorts of yummy things for he and B to eat, and it smelled amazing! And, I had just done my first post-Reset week meal plan, and it was awesome, and I wanted to go ahead and eat all the food I had just bought. But, I held strong, and I’m so glad I did, because I was thrilled with my results, both physical and otherwise… 🙂
